FRESHLY Mediterranean Lettuce Pasta Delight

Ingredients

  • 250 g fusilli or spaghetti pasta
  • 1 tbsp pine nuts
  • 2 cloves garlic, minced
  • 1 small white onion, thinly sliced
  • 4-5 large leaves lettuce, sliced
  • 100 g baby spinach leaves
  • 1⁄3 cup sun-dried tomatoes, chopped
  • 2-3 tbsp capers
  • 2-3 tbsp tablespoons grated Pecorino cheese (optional)
  • 1 tbsp butter
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest (optional)
  • 2-3 tbsp extra virgin olive oil
  • Salt and pepper, to taste
